Cris here.

I can remember when Puddie and I were dating, we would often ask each other about favorite foods and dishes and one of the things I told him I loved was cooked carrots. This recipe totally reminded me why. Now, mom would always use a bag of full sized carrots and chop them up and put them in with roasts and I just LOVED a good carrot cooked in with a roast all day. However, I have grown accustomed to using sweet petite carrots in a lot of my dishes since leaving home.

But, when I saw this recipe in my friend Mary’s new cookbook Deep South Dish: Homestyle Southern Recipes(thanks for sending me a copy Mary!), I just knew I wanted to try this recipe the way my mom used to (and the way Mary does in her book). I was not disappointed one bit!

Now here I am going on and on about carrots, but really the pork roast itself is fantastic. Flavorful, moist and tender! You guys are going to love this recipe, I just know it!

      Lou-
Every slow cooker cooks different depending on age, style, size, etc. My roast was very tender and juicy.

If you are having trouble with yours you may try using a meat thermometer and begin checking your meat’s tenderness once it hits 145. It will get more tender as it cooks. I tend to like to cook mine to at least 160 for the texture we desire.

You also might check to make sure you are using a roast with a nice bit of fat in it. That will also help with your juiciness. Hope that helps.

FAQs

Do you put vegetables in crock pot same time as roast? ›

For extra color, add some frozen green beans or mixed vegetables about 30 to 45 minutes before the pot roast is ready. Serve the pot roast and vegetables with hot baked biscuits or crusty bread for a tasty and satisfying family dinner.

Does the pork roast need to be covered in liquid in crock pot? ›

Your liquid should not cover your pork in the slow cooker: it should only come up about a quarter of the way up the sides. The pork will make more liquid as it cooks, and you need to leave room for that.

Should meat or vegetables go in crockpot first? ›

Fill the crock pot at least half full and no more than two-thirds full. Thaw frozen meats and vegetables before placing in the crock pot. Place dense vegetables in crock pot first, such as carrots and potatoes, since they take longer than meats to cook.

How do you keep pork roast from drying out in a crock pot? ›

Yes, it's generally recommended to add some liquid when cooking pork in a slow cooker to prevent it from drying out and to help distribute flavors. You can use broth, wine, barbecue sauce, or even just water depending on the recipe you're following.

What vegetables should not be added to a slow cooker? ›

Tender vegetables

Vegetables such as peas, asparagus and peppers can become a flavorless, mushy mess in a slow cooker. Stick to heartier root vegetables like potatoes, onions, leeks and yams, or wait to add the tender vegetables until the last 30 minutes or so of cooking time.

Do vegetables go on top or bottom of roast? ›

Using tongs, sear meat on all sides until browned and place on top of vegetables in the crockpot. Add whole garlic cloves into the crevices of the roast (on the top and bottom usually where there is a seam of fat).

What is the best liquid to cook pulled pork in? ›

Transfer everything to a large slow cooker and add a splash of liquid — water is great, but so is broth, apple juice, or beer if you have them handy. Cover and cook on low until the meat is tender and pulls apart easily.

Do potatoes go on top or bottom of meat in crockpot? ›

Place firm, slow-cooking root vegetables like potatoes and carrots at the bottom of the crock and pile the meat on top. Set the heat level: A general rule of thumb is that cooking on the low setting (170 degrees F for most models) takes about twice as long as cooking on high (280 degrees F on most models).

Do you flip a pork roast in the crock pot? ›

Sear and slow-cook.

It should come about 1/2 way up the sides of the meat. Cover with a lid and cook on low for 10 hours, flipping the pork butt over halfway through. Note: it's important to not overcook the pork butt, or it'll make the pork tough and stringy.

When should I add potatoes to slow cooker? ›

Tender vegetables such as zucchini and beans can be added to your dish in last ¾ - 1 hour of cooking when cooking on High, or 2 hours if cooking on Low. Hard, starchy vegetables like potato and carrots are best added around 3 hours before the meal is done if cooking on High, and 4 hours on Low.

When should I add peppers to slow cooker? ›

I add only part of the bell peppers in the beginning, which gives the tomato sauce and the chicken the flavor of peppers, but still keeps most of the bell peppers nice and crisp, since they are sort of steaming during the second part of the cooking process.

Why do vegetables not cook in slow cooker? ›

Not enough liquid: Slow cookers rely on moist heat to soften food. If you don't have enough liquid in the pot, the carrots won't cook evenly and may stay tough. Aim for at least a cup or two of liquid, enough to reach about a third of the way up on the ingredients.

Can you overcook a pork roast in the crock pot? ›

The pork roast is done after about 3 hours on high or about 6 to 8 hours on low. To avoid overcooking the pork, check the temperature with an instant-read thermometer. If overcooked, the pork can become dry and could be difficult to slice.

Why is my pork roast tough in the crock pot? ›

Why is my pot roast still tough? It's because you haven't let the collagen break down. Extend the cook time, make sure there's enough liquid and keep an eye on the dish.

Do you have to brown pork before putting in crock pot? ›

Preparing the pork

I prefer to season the meat before adding it to the slow cooker with my favourite spices, along with salt and pepper. I also recommend browning the meat slightly prior to slow cooking which will help maximise the flavour. However, this is a step that can be left out if you don't have enough time.

When should I add vegetables to slow cooker?

When should I add my vegetables to my pot roast? ›

Cook several hours until fork tender, this may take from for 3 1/2 to 4 1/2 hours, or longer, depending on the size of your roast. Check once or twice to make sure that the liquids haven't cooked down too much. If so, add a bit more stock. After the first 2 1/2 hours, add the vegetables all around the meat.

Can you put raw meat and vegetables together in a crock pot? ›

Yes, this is a safe method of cooking, as long as everything in the pan is fully cooked before eating. Can you cook raw meat and frozen vegetables together in a slow cooker? You can but the vegetables will be over cooked by the time the meat is tender. Better to add them near the end of booking time.

Do all vegetables take the same time to roast? ›

General Roasting Times for Vegetables

Root vegetables (beets, potatoes, carrots): 30 to 45 minutes. Winter squash (butternut squash, acorn squash): 20 to 60 minutes. Crucifers (broccoli, cauliflower, Brussels sprouts): 15 to 25 minutes. Soft vegetables (zucchini, summer squash, bell peppers): 10 to 20 minutes.
