A churro is a fried pastry that’s often rolled in cinnamon and sugar. They’re golden and crispy on the outside and light and airywithin. These Churro Rice Krispie Treats are far from the traditional pastry, but they do hit all the right flavor notes. Warm brown butter infuses the treatswith a golden toastiness while the cinnamon-sugar topping brings a sense of familiarity. Each bite is pure churro bliss. Continue reading for the recipe.
The inspiration for these Churro Rice Krispie Treats comes froma local baking company, Bliss & Baker. I tried their El Churro Crispie several months ago, andimmediately fell in love. I just knew I had to recreate them at home.

Servings 12 treats
Ingredients
- 1/2 cup sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon kosher salt
- 1 stick (4 ounce) unsalted butter, plus extra for the baking dish
- 1 10 ounce bag marshmallows
- Heaping 1/4 teaspoon flaky sea salt
- 6 cups Rice Krispies cereal
Instructions
Add sugar, cinnamon and kosher salt in a small bowl, stirring to combine. Set aside. Also butter a 9″ x 13″ baking dish and set aside.
In a large pot, warm butter over medium low heat. The butter will melt, then foam and bubble, then start to brown. You will notice little brown bits forming at the bottom of the pan. Stir frequently during this process and keep your attention on the pot. The butter can go from wonderfully brown to burnt in just a few moments. You will know the butter is done when it gives off a nutty aroma and turns a golden brown.
Turn off the heat and add the marshmallows, stirring until smooth. Add half of the cereal and stir to incorporate. Sprinkle in the flaky sea salt and remaining cereal and continue stirring until everything is fully mixed together.
Transfer mixture to the prepared baking dish. Using a silicon spatula (or piece of parchment paper), press mixture into the dish in an even layer. Sprinkle 1/4 cup of the cinnamon-sugar evenly over the treats. Shake the baking dish around so that the cinnamon-sugar gets into all of the nooks and crannies. Save remaining cinnamon-sugar for another batch of treats.
Let cool, cut into 12 treats and enjoy!

Ahhh this is brilliant! Love me some churros, but not the whole frying part. So all the flavors in a no-bake treat = I’m sold!

An awesome mash-up! I support any dessert that doesn’t involve making our kitchen hotter than it already is in the summer (yay for no A/C :-/)

I’d rather have RKTreats than a fancy schmancy dessert most of the time and with the churro infusion here, I want to eat the whole pan!

This is a great idea for portable snacks for the harvest crew. I love RKTreats! And they will fit right in with their lunch today: roast beef with tomato, arugula, cheese, horseradish mayo on a Panini.Reply
Brandon Matzek says
Agreed! You can cut them into smaller bites too for sharing 🙂

Interesting!! Yeah they’re definitely big in the US. I’ve enjoyed them since I was very young. My mom never made a churro version, but she made the classic treats often!

Hello !
I did try your recipe for my children. It was delicious but not beautilful enough to take a picture and send it to you 😉
I used simple unsweetened rice flakes and marshmallows. No added sugar but a generous spoon of almond butter mixed with with candied orange peels. A pure marvel !
Thanks a lot for this inspiration !Reply

Excellent!! So glad you liked the recipe 🙂 Thanks for sharing.
